Roasted Three Whole Chickens
[ Monday March 27th 2023 at 10:54 pm ]

For several years I've cooked my meals in advance and froze them. This has worked really well as a strategy for managing my physical disability and chronic pain. This allows me to maintain my ability to eat well on days when my legs are painful. I have just finished roasting three whole chickens. I am going to let them cool down over night. Then tomorrow I will cut them up into individual servings and freeze the meat. This prepares several meals in advance without making that many more dishes in cleaning up.

I've also recently been having a wrap for one of my meals each day. This is also working well. I am not finding it physically challenging cutting up the vegetables and there is minimal clean up involved in preparing these. This is a really good combination. I am going to start looking into buying a crepe / tortilla maker. This should be able to save me money after about 6 months. The price of groceries has gone up so much since the pandemic. Overall I don't want to wreck a strategy that is working for me.
