With my physical disability and chronic pain preparing a healthy lunch and dinner meal is challenging. Yet I need to maintain a healthy diet so I am best equipped to deal with the emotional stress and challenges which come a result of having a long term disability. The strategy I've deployed to manage healthy eating is cooking ahead using a slow cooker and freezing. Regardless of how I am feeling healthy nourishment is available to me. In this video I share an overview of how I use the slow cooker to prepare my meals in bulk. Many of the tips are suitable for someone new to the slow cooker world. In addition to the ingredients either water, chicken broth or some other liquid needs to be included. I added extra water for the rice to absorb while still having liquid for the meals this will prepare. I am physically disabled and rely on an electric wheelchair for my mobility. The use of a slow cooker is compatible to this lifestyle. This video is also suitable for single adults who are having a hard time balancing employment, sleep, household chores and social engagements.
